The Ultimate Burger Plus DIY Condiments Sides and Boozy Milkshakes edition by America Test Kitchen Cookbooks Food Wine eBooks Reviews

  • I hesitated to buy this book as I have nearly every book by CC and CI and also subscribe to their website (worth double what they charge for all you get) but I'm super happy I got this book. Quite a few burgers not previously published and they all sound delicious. Sides and milkshakes and all kinds of other helpful information. You can't go wrong with CC and CI ; they are how I learned to cook great meals MANY years ago(back when yearly issues were bound in green hardbacks) .
  • Just got this book, and it's amazing... You will not get bored with this book... Love the instructions... Easy to follow... And the pictures to... Such diversity with the sides.. can't write enough about this book... A must have book for sure! This is one you will use allot!
  • I was so excited to get this cookbook. But when it arrived there are only a few printed pages. The rest is blank.
  • This is a great cookbook for a burger lover. Although I got it for myself, I was fascinated that my husband saw it and went through every page and was telling my things from it "Did you know there's stuff you can put between the layers when freezing patties; it works better." "Look, here a section on how to make the patties stick together." "It tells you here about the differences between different types of ground beef." He looked at every recipe for burgers and for buns. All this to say is that even though I like this book, especially for ways to make tasty burgers from pork and turkey, this is one book that our grilling men will look at. I'm not sure I should make the bun recipes--we'd probably break out the butter and just eat them warm without waiting for hamburgers to go one them. While there are lots of pictures with this cookbook, it doesn't have a pic with every recipe, but if that doesn't bother you, this is a great cookbook for those that want to wow their families or friends with spectacular burgers. Recommended.
  • America's Test Kitchen went all-out with this Ultimate Burger book! In hard back, it runs 246 pages. About half of the pages contain mouth-watering photos professionally captured. If you're a seasoned burger pro or a rookie, this book is for you. It will definitely up your game, and give you the opportunity for more burger diversity than you thought possible!

The book has recipes for beef, turkey, veggie, seafood, and bison burgers, and even doughnut shop burgers (doughnut with your burger, anyone?), burger basics, sliders, making your own sauces, the perfect patty, non-beef burgers, salads, fries, and even breads. The book has nutritional information for the recipes, and even a conversions section. There is a section on cooking tools, cooking methods, slaws, fries, drinks, breads, buns, etc. Really, I could go for a couple of summers cooking these recipes every day and not run out. Thai burgers, anyone!? Highly recommended!
  • I have to admit that I was skeptical at first. I mean…a burger is a burger, right? Wrong!

This cookbook, with all its delectable photos, teaches you to take your burger to the next level. From kid-friendly to more adult fare, it’s all here. Learn the secrets to grinding your own meat (or having your butcher do it for you), making your own specialty condiments when the old bottle of ketchup isn’t enough, and even knowing the best type of meat to use for your perfect burger.

And if you’re more of a turkey or chicken person, you’re covered.

    Finally, there are awesome sides.

And for burger purists, you even get tips on making your basic burger just a bit better.

This book will definitely make you hungry!
  • I've always loved a good burger, and I've had many different types in many different places. And now here is a cookbook that really takes the burger seriously and elevates its preparation to a solid professional level.

The book is beautifully done with thick glossy paper and stunning color photos. Everything looks so good! There are numerous chapters of recipes, starting with the basics --- how to choose meat, make a patty, cook the burger to the desired state of doneness. Then the book branches out; regional varieties, international varieties, accompaniments (of course including fries, but much more than that).

The recipes are authentic enough. I looked for items with which I was familiar and found, for instance, that the Vietnamese version was, if not fully Vietnamese, certainly close enough. Similarly the New Mexico green chile cheeseburger, and although it substituted other chiles for Hatch chili, it did make note of that (and that they are hard to find outside the region).

Each recipe includes a "Why this recipe works" introduction which is helpful and interesting. All in all this is really a well done book (no pun intended).

The downsides? The chapter titles aren't always all that descriptive, and some things that should be in one chapter appear in another --- some of the sides, for instance, have their recipes immediately when they are mentioned rather than in the 'sides' chapter. That's a convenience but also makes them harder to find later. Fortunately there's a very good index (as well as nutrition and measurement charts).

The only thing I truly didn't like was the so-called "boozy milkshakes." Having that phrase on the cover detracts from the tone and tenor of the book, and alcoholic milkshakes seem really out of place ... and frankly, not very appealing.

But the book is a certain five stars. It's beautifully done with excellent recipes, great photography, a true culinary approach, and it's loaded with original ideas and solid information.
